Leif Sørensen combines his vast knowledge of international cuisine and food culture with his passion for preparing food from local raw material. Using Faroese raw materials originating on land, at sea and in the air, Mr. Sørensen transforms the meal into an exquisite emotional and intellectual experience. Drawing on his extensive experiences and understanding of Faroese as well as international gastronomy, he passes on his knowledge to his guests spiced with stories on the origin of the particular dish and its traditional ingredients, which he uses in new and original compositions, creating a culinary treat and eventful presentation of the meal.
